Instructed to utilize alternate Southbend hot holding unit until magnetic strip is replaced, and utilize stem thermometer for temperature readings, until external thermometer repaired. Reminded to monitor hot holding at 140°F. or greater. Contact HDO (315)866-6879 once unit repaired, and holding at greater than 140°F. for approval to return hot holding unit to service. Follow up in 1-2 weeks.
