This does not provide adequate protection for food items such as blue berries. Discussed the use of short bin items and switching out when they need restocking. This helps protect from potential cross contamination issues. Observed two food services to students during the course of the inspection.

Comments: During the course of inspection the following items were discussed: - When cooking and cooling large amounts of pasta that have been rinsed in cold water, it is still highly recommend to shallow pan in 4" or less and cool from 120-70F in two hours and from 70 to below 45F within an additional 4 hrs. - Cook manager stated that all self serve items that are provided for service each day are discarded at the end of service.
