Comments: Inspection in response to a patrons illness on 7/21/18. The type of chicken wings eaten are purchased frozen and deep fried from frozen state and then placed in hot holding. Hot holding temperature taken during this inspection was 185 F. These wings were cooked 10 minutes prior to inspection. These chicken products are discarded after 4 hours in hot holding as per approved variance. Discard times were posted. Hot holding of scalloped potatoes 150 F. Food temperatures on the buffet line are monitored and recorded at least every 2 hours.
