At 1:30 pn, this inspector found RTE crab meat stored under raw beef. Chef relocated and CORRECTED. 5a/5e. Beverage Air coller at 1:45 temped at 60dF. Thermometer sotred inside cooler read 50dF. 13 Crab sliders, using inspectors calibrated food testing thermometer, temped at 54dF. Chef voluntarily discarded and CORRECTED. 5e. LIne cooler, using inspectors calibrated food testing thermometer temped at 57dF. No potentially hazardous foods will be stored in cooler until repaired. CORRECTED. 7a. At 1:10 pm, this inspector temped sliced grilled chicken breastm using inspectors calibrated food testing thermometer, temped at 135dF. Chef had just put it under light 5 minutes prior. He returned to grill and completed cooking to 165dF. CORRECTED. 7e. At 1:15, inspector found mushroom white sauce on hot holding line to be temped at 113dF. Chef stated that it had been put there 20 minutes prior. He returned to stove and reheated to 165dF. CORRECTED. 8e. No thermometer in salad line cooler. 10b. Single service items in patio waitress stand stored on bare wood shelf, Not smooth and easily cleanable. 15a. Walls and ceilings in kitchen have grease/grime/dust build up. Build up on vents above grills. 15b. Dust build up on 3 box fans over head. 15b. Dry storage light not operable. |
