Comments: 5A: Sliced American, Swiss and Cheddar cheeses in the top of the line cooler temped at 49oF with Inspector's calibrated thermopen. It was determined that they were out of temp for less than 2 hours and that since there was no permanent cover for top of unit, another method had to be found in order to maintain temps of 45oF or less. Ice was put into a smaller bucket below each bin of cheese and saran wrap was used to cover chesse and hold in cooler temp.

Comments: 6A: 3 Roast Beef Sandwiches found at 112oF while under heat lamps, on line. They were not on line when inspector entered establishment. Product was voluntarily discarded by Asst. Mgr. Lisa Smith. The roast beef on the slicer (under heat lamps) tested at 122oF. at time of inspection. It was determined to be out approximately 1/2 hour. Inspector allowed beef to be rewrapped and returned to oven to be reheated to a temperature of at least 165oF before returning to hot hold. Beef in alto sham temped at >145oF. this was allowed to be used for service. Notice to Discontinue issued. 15B: Light in walk-in freezer not shielded.
