Comments: The Brae Loch Inn, FSE inspection conducted Tuesday afternoon during prep. Discussed/suggested removing any non-used equipment, and/or seasonal use equipment should be properly cleaned between seasons. Food observed properly stored in the walk-in cooler. Discussed cleaning regime/routine for under and behind equipment, and the refrigerator interiors. Hair restraints and hand barrirs are worn. Thermometers installed throughout.

Comments: Proper cooling procedures observed in regards to large cuts of meat. Cold holding temperature of items observed in upstairs deli unit are less than 35 degrees fahrenheit. Floor below dishwasher has been replaced; new floor tiles and new dishwasher installed. Discussed dishwasher operation and the requirement for chemical test strips to ensure sanitizing solution is at the proper concentrataion. Downstairs kitchen is not in operation during the summer months; discussed maintaining this area in a clean and sanitary fashion while not in use and ensuring all ceiling tiles are replaced prior to putting kitchen back in use. Shelves in downstairs kitchen have been repainted. Downstairs bar is locked and inaccessible at time of inspection. Icing observed within walk-in freezer and waitress deli unit, discussed seeking service for this equipment. Discussed maintenance of floor below and around refrigerator condensors.

Discussed storage of baskets; if baskets are utilized for storage of food product, baskets must be maintained off of the floor. Discussed properly patching the hole in bakery wall along prep table. Dishwasher has not been replaced as previously discussed; plans to replace dishwasher are unknown at this time.
