Comments: The Point, inspection conducted Friday afternoon. Hot holding soups observed at adequate temps, prime rib soup 155F, NE Clam Chowder 168F. Cold holding items observed throughout walk-in cooler and kitchen refrigerators at adequate temps, 32-43F. Discussed the monthly prime-rib dinner, cooking, cooling, and reheating/re-use of left-overs. The ice machine has been removed from the restaurant. Food is now offered Wednesday thru Sunday; Wednesday is Wing Nite, Thursday is "Specials" (nextThurs. is cornished game hen dinner), Friday is steak and fish, and breakfast is served Sunday mornings. Thermometers installed throuighout. Discussed clean-up and organization of clutter and non-used or decommissioned equipment.

Comments: The Point, inspection conducted Thursday afternoon prior to lasagna dinner night. Lasagna cook temp observed at 166F. Improved cleanliness and maintenance observed by this inspector compared to previous inspections. Hot holding spaghetti sauce found at 168F. Cold holding cooler items adequate, maccaroni salad and chicken gravy 40F. Walk-in cooler adequately maintained clean, chili cold holding temps found at 39F. Thermometers installed throughout. Ice machine found clean and sanitary. Separate ice bins utilized at the bar.

Hot holding/cook temps adequate: Gravy 155F, Beef Stew 145F. Discussed cooking, holding and reheating temperatures and procedures. New vents have been installed in the cookline hood. Thermometers present throughout. Discussed cleaning schedule and procedures.

Comments: Adequate storage of raw shell eggs and raw meat observed. Chilli and cheeseburger soup adequately held at 150 degrees Fahrenheit and greater while on hotholding. Thermometers supplied for all refrigeration/freezer units. New hood filters have been purchased for half of hood, the remainder are scheduled to be purchased. Garbage containment outside of kitchen door is improved, however, snow is hindering ability to do true evaluation. Discussed better organization of chemicals in cabinet below sink. Ice machine is clean, discussed obtaining appropriate exterior panel for ice machine. Chest freezer is no longer in use. Many improvements have been made, discussed maintaining a regular maintenance and cleaning schedule.
