Comments: Comment: Facility has one menu item that is prepared in large volume, that is the Michigan sauce. A HACCP has been conducted in the past. The michigan sauce is cooled in freezer but, then placed in cooler for a quick rotation to eventual reheating and hot holding. There is a high turnover of Michigan sauce. Facility is very clean. Although, the chlorine sanitizer is a little heavy on the bleach. There is an established process to ensure safe food to the public.
