Operator to complete logs for defrost, reheat, and hot hold and submit those logs with cooking and cooling logs to CCHD by 7/30/16 for HACCP analysis. Typical batch size for meat sauce is 3qt, Chili is 2qt, 30 sausages. The permission from CCHD to continue processing complex food items is contingent upon a full HACCP review. |
