Item 8B: In use food dispensing utensils improperly stored Comments: Comment: Accuracy of food probe Thermometers were checked, proper concentration of sanitizer was checked, proper hot holding above 140F and cold holding below 45F was verified. Handwash station was fully equipped and accessable. Inspection was facilitated by a reported foodborn illness as a result of chicken wings consumed with ranch dressing by two individuals out of a group of four. The prep cooler where individual containers of ranch dressing are stored was properly cold holding, as well as, walk-in cooler where the one gallon containers of ranch dressing are stored. Discussed complaint with operator. |
