Harborage areas available for rodents, insects and other vermin Comments: Upon entering this facility to start the inspection, a large pan of cheese sauce, covered with a plastic lid was observed on a kitchen work table. The temperature of the cheese sauce was measured to be 73° F. Per interview, the cook stated that when he arrived at work 40 minutes ago, the cheese sauce was in a pot cooling with an ice wand. The cook stated that he was going to put the cheese sauce in the walk-in cooler (at a temperature of 73° F). Proper cooling methods were reviewed and it was recommended that the cook place the cheese sauce in shallower metal pans and place them in a freezer for rapid cooling. Better communication between the day and evening staff concerning cooling of foods was discussed. Using and completing cooling logs was also discussed. Food temperatures in all refrigeration were adequate. Examples include: Smoked Trout = 37° F, Feta cheese = 42° F, mashed potatoes = 45° F; pulled pork =43° F; cooked broccoli = 40° F; raw ground beef = 42° F, onion soup = 40° F, cooked elbow macaroni = 41° F; salmon = 41° F. Hot holding temperatures in the steam table and soup kettle were acceptable: soup =167° F; marinara sauce = 177° F. Staff could not find any cool;ing logs that were recently completed. Discussed the importance of proper cooling at length. |
