Shepards pie, apple crisp, and salad were served for Election Day dinner. products were cooked and cooled separately the previous day of inspection and assembled on the day of inspection for reheat. all was done on shallow metal sheet pans. cooking temperatures were discussed and cooling procedures were reviewed and found to be acceptable. a food safety packet was provided and reviewed at the time fo inspection. Thermometers were calibrated on site and found to be accurate. A digital is recommended. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. The menu was reviewed at the time of inspection and no other meals are served. |
