Food temperatures measured in the small “Tramoutine” brand reach-in refrigerator in the kitchen were marginal, the following food temperatures were measured in this refrigerator: American Cheese = 47° F, cooked yellow squash = 46° F, cut tomato = 47° F. This refrigerator must be repaired or replaced so that foods can be held at or below 45° F. Reviewed some old cooling logs. No cooling logs have been completed recently. Please complete a cooling log at least once a month. Reviewed the menu and discussed cooking and reheating temperatures. Please get a digital thermometer.
