Item 11D: Non food contact surfaces of equipment not clean Comments: Discussed: Food continues to be prepared and cooked at the Rye Lake campus. Food is delivered around 10:00am and the temperature is taken and logged in on the temperature log sheets. Prior temperature log sheets must always be available on-site. Hot food is placed in the oven and cold food in the refrigeration units. When the hot food is removed from the oven, another temperature is taken and the food is then individually packaged into take-out contaners and is taken to the classrooms by the teachers for service. 0-220F thermometer on-site for use and hot holding and cold holding temperatures adequate at this time.; All trays, serving spoons, etc. returned to Rye Lake Campus for adequate washing, rinsing and sanitizing. Discussed adequate washing, rinsing and sanitizing of stationary equipment (i.e. prep tables). Sanitizer and sanitizer test strips must be available for use in adequately cleaning such surfaces. |
