One thermometer is a standard dial stem thermometer that the cook keeps in his shirt pocket. The second is an IR thermometer that is kept on the shelf above the food prep table. Walk-in refrigerator was serviced. There are two dial thermometers located inside the refrigerator. One reads 41°F and the other 42°F. A temperature was taken of raw chicken in the refrigerator. Actual temperature of raw chicken was 41.6°F. Repeat red item violations may be subject to enforcement action.
