Hot holding temperatures good: soup 166F, meatballs 146F, pepper steak 145F, chicken broccoli 146F, mushrooms 143F, egg fu-yung 150F, shrimp 144F, chicken 156F, spaghetti 143F, fish 156F, potatoes 145F, green beans 150F, rice 168F, veggies 165F, and white rice 165F. Cold temperatures good: tomatoes 36F. Food was being replenished frequently on the buffet at the time of inspection.

Comments: Low temp dish machine does not have sanitizer in the final rinse. Owner called the repair man. Use 3 bay sink or add sanitizer to the final rinse cycle. Wiping clothes not stored in sanitizer and wiping cloth with raw chicken being used to clean counter. Corrected by making up sanitizer, disinfecting the cloth and rewiping contaminated counter. Ice scoop was stored improperly. Corrected by placing in a container. Food uncovered, double stacked, and stored on the floor of the walk in cooler. Racks in the cooler have mold and accumulation of food particles on them. Floor in walk in is slippery/greasy. Comfort Pest control comes weekly last visit 12/19/17. Discussed ill food worker policy. All hot/cold temps in coolers and at buffet were good. Gave tongs to owner and discussed handling of ready to eat foods.
