The box is then wheeled out to the kiosk. For each lunch period, items are moved from the portable warming box to the warmed display case at the kiosk. After each lunch period, the items in the display case are brought back to the kitchen and temped by the cook. Any item that is below 140 degrees F is discarded. Any item that is above 140 degrees F is placed back inside a larger warming box in the kitchen. |
