Comments: Discussed cooling with head chef. The cooler in the kitchen had two items in the cooling phase but there may not be enough circulation for these items to cool properly. Pasta must cool to 45 degrees F by 9:30 pm or be discarded. Asparagus must cool to 45 degrees F by 9:30 pm or be discarded. There appears to be an excessive amount of unused equipment in the storage areas. Any equipment not in use should be removed from the premises. Due to extra stage of cooking (cook, cool, reheat) this food facility will be considered high risk. Discussed sick worker policy.
