Item 5B (Critical): Potentially hazardous foods are not cooled by an approved method where the food temperature can be reduced from 120oF to 70oF or less within two hours and 70oF to 45oF within four hours. Comments: Spaghetti dinner consisting of pasta, meat sauce and a green salad was being prepared. Meatballs for the meat sauce were a packaged, pre-cooked frozen product that were reheated and added to the sauce. Temperatures of the sauce being hold held in various crockpots were measured to be 161 degrees and 174 degrees F. Discussed the use of the basement freezers. They were not plugged in at time of inspection and are not used. |
