Comments: No violations were observed. This facility uses Time as a Public Health Control; TPHC logs were reviewed and determined to be acceptable. The mechanical dishwasher wash temperature was observed to be 150° F which is the minimum manufacturer specification for the wash cycle. The sanitizing rinse temperature was observed to be 180° F, which is the minimum manufacturer specification for the sanitizing rinse cycle. All food temperatures measured were acceptable: Walk-in cooler - deli ham = 39° F, chicken salad = 39° F; Hot holding - fish sticks = 146° F to 180° F; milk in self service milk cooler = 43° F.

The wash cycle temperature on the mechanical dishwasher was barely reaching the manufacturers specified temperature of 150 F. This was also a comment on the last inspection. Please have this dishwasher looked at and adjusted so that it easily meets the 150 F wash requirement.

Temperatures measured: hamburgers = 155.3 F, milk = 40.3. Discussed proper cooling methods and time/temperature parameters.
