Any questions can be directed to this office via telephone or email. Discussed adequate cooling methods of potentially hazardous foods (raw chicken wings) with operator. Raw wings are baked to 165*F on sheet trays, cooled in walk in cooler, portioned, and deep fried as needed for orders. Initially cooked wings must cool from 120*F to 70*F in two hours. Wings must then cool from 70*F to 45*F in four hours. The method used to cool wings must meet these requirement as outlined in State Sanitary Code.
