Any questions can be directed to this office via telephone or email. Discussed cooling of potentially hazardous foods (especially thick soups/sauces) with operator. Large metal pots of soup with depths greater than 4 inches must be broken down into shallow pans < 4 inches in depth prior to moving products to walk in cooler. Alternatively, ice wands may be used in the larger pots to cool adequately in walk in cooler. State sanitary code requires that the entire mass of potentially hazardous foods are cooled from 120*F to 70*F in 2 hours (rapid chill); then from 70*F to 45*F in 4 hours. Cooling foods should remain uncovered in walk in cooler to allow heat to escape.
