Timing of the inspection allowed the observation of closing procedures. Interview with cook indicated the method to cool a pot of broth (at greater than 140°F on the counter) may not cool quickly. When asked about method, cook decided to use ice baths and shallow pan methods. Cooling foods were around 60°F at end of inspection. Management is asked to identify all foods requiring cooling; then institute specific methods for each food. |
