The following temperatures were measured: Bain Marie Upper Compartment - Sliced Tomatoes - 39.7 and Diced Tomatoes - 38.1, Walk-In Cooler - Roasted Red Potatoes - 41.1, Onion Soup - 40.5, and Mashed Potatoes - 120.8 to 125.6 at 2:20 PM. The operator stated that the Mashed potatoes were placed in the Cooler at 1:30 PM at about 150 to 160 degrees F. The Mashed potatoes were transferred to a wide, shallow stainless steel pan and placed in the Walk-In Cooler. The temperature was measured at 4:00 PM and found to be between 56.3 to 66.2 degrees F. The air temperature of the Refrigerator Compartment of the Whirlpool Refrigerator/Freezer was measured at 40 degrees F. The Air Temperature of the Bottom Compartment of the Bain Marie was 34 degrees F. Report e-mailed.
