Comments: new compressor has been installed in the walkin cooler. both compressors are working now and the walkin cooler is holding all food at 37 to 39 degrees. Walls in the walkin have some plastic milk board installed to make it more smooth and cleanable. dish washer was running at 120 deg F. linens are being stored inan a container now. Magnetic knife rack is being used to store the knifes at sauté station. Many areas in the basement have sewer lines that are over the preparation area and freezers. Food in all prep units and refrigeration units ranged from 37 to 43 degrees F. The operator and i have discussed enclosing these pipes in an effort to avoid contamination if a leak were to occur. certain portions of the basement should be sectioned off and not used as part of the food service at all including the sump hole area and areas of mechanical nature such as the boiler and hot water heater. Basement is in dyer need of renovation and improvements are to be done asap.
