Owner had questions regarding mobile food service permit, provided owner with a (14-4) mobile food service packet and application. The Phoenix Sports Bar in located inside a Off Track Betting (OTB) which has been granted a smoking waiver. OTB has met all conditions and details of their smoking waiver. The smoking waiver will expire on April 9th 2018 and will be up for renewal at that time.

Comments: Inspection in regards to complaint (#C16-12-130) improperly tempered foods on buffet line, and an order a macaroni salad being served warm. All food items on buffet temped above 140ºF or below 45ºF with the exception of a pan of Spanish rice - 136.5ºF. The rice was placed on buffet approximately 30 minutes ago and was reheated to 165ºF. Explained to the owner and manager that hot holding food items require a holding temperature of 140ºF or greater. Discussed proper procedures for preparing macaroni salad and that all cold holding food items require holding temperatures <45ºF. Explained that the buffet unit is designed to maintain food temperatures and not heat up or cool down the food items place into it. Recommend that prior to food items being placed on buffet line they are temped either well above or well below the minimum and maximum temperature requirements. Provided food temperature requirements chart, cooling and reheating and food safety pamphlets.
