Comments: Facility is generally clean and fairly organized. please consider options to reduce any stored items not needed to facilitate proper floor cleaning within kitchen and prep areas Walk in cooler 42 degrees ambient with block moozeralla 42 degrees and bagged cooked meatballs 24 degrees within. Defrosting in cooler, thank you. Steam table cream of broccoli and shrimp chowder 163 degrees below counter drawer cooler with (frozen) cooked chicken breast within 28 degrees and sliced roast beef 40 degrees within. Open face cooler in dining room has 42 degree ambient temperature with thermometer located in top rear corner, please relocate thermometer to front and bottom of unit where prepared foods located observed large pots (likely greater than 10 gallons) one of which was filled with tomato sauce within walk in cooler at 42 degrees (same as ambient for this unit today). As such a quantity of tomato sauce of this quantity is unlikely to meet rapid cooling requirements unless previously broken down or ice bath or wand in use. No evidence to this today. Therefore discussed rapid cooling where once cooked food has cooled to 120 degrees air cooling is not allowed, therefore air cooling food observed at 119 degrees (or less) is a red violation and can result in discard. Proper rapid cooling is 120-70 degrees within 2 hours immediately followed by 70-45 within next 4 hours. Discussed daily tracking of food not hot held to assure it is not served after 4 hours from cook time. Options of masking tape tags and "white board" discussed as options. Food not documented is a red violation and may be discarded as such, be advised.
