Comments: Most of the door handles to the refrigeration units have been installed, handle to the door of the walkin missing. Indirect drain has been installed on the food prep sink, Walkin cooler walls and ceiling have been replaced and are in good condition. No home caned goods were found in the facility. Dish washer was operating at 148 degrees and injecting an adequate amount of sanitizer. one of the facilities walkins and the walkin freezer is down but the operator has rented a refrigeration truck until the compressor is fixed and functioning properly. I talked with the operator about making sure all mop water is being dumped down the mop sink. It can not be dumped in the storm sewer drain.

Comments: Operator stated he would be buying ice wands to cool in the large containers as well as keeping the product uncovered. Facility is relatively clean he has a cleaning crew come in once a week to clean a portion of the kitchen they work there way around every week doing about 1/4 at a time. A tote is in the dry storage area for dented cans labeled DO NOT USE. no mouse droppings were found in the dry storage area. They have a contract with a pest control company to do all pests control. Operator had a quote for the walkin refrig units and freezer to be redone. as well as drawings. Hood was very clean cook line looked to be kept clean as well.
