Hot holding steam table items observed at adequate temps, 140-175F. Chicken cooking and soup reheating at time of inspection, adequate proper temps observed, 165-175F. Discussed the maccaroni and cheese prep/cook/cool procedures; approx. 700-pounds are made per week. All cold holding prep cooler, and walk-in cooler product temps observed adequate, 36-41F. Equipment and facility maintained clean and sanitary. Thermometers installed throughout. Hair restraints worn by all, and gloves utilized. Discussed the detailed cleaning routine for the floors and rubber mats. Owners and staff are complimented for cleanliness and procedures. |
