| Comments: No violation were observed during the Taste of the North Countries Inspection. The following menu items were hot held at greater than 140 F: Macaroni and cheese 143F degrees, shredded chicken 144F degrees, pulled pork 147F degrees and mashed potatoes 143F degrees. Discussed with Jenn to frequently stir the hot held pull pork and shredded chicken to maintain consist temperatures throughout the meat. Gloves were observed be worn by Jenn and thermometers were on site. | ||

Interview with manager, Jen, stated that this cup is used to add water to the hot holding steam table (BENEATH the steel food containers). Water is never added to food products to "hydrate them". Also, had discussion with manager about the BBQ sauce being hot held at the condiment station. The sauce temps at 135F however the manager provided me with information from their corporate office stating that the product is shelf stable because of the PH being 3.9 or less. I did check the PH of the product and it was 3.5. They hot hold the sause as a courtesy because their customers prefer the sauce to be hot. |
