Comments: 5A - At 1:20 pm inspector temped pasta in a total of 4 drawers underneath cook line and found them to be between 50 and 53 degrees. AS per manager pasta had been placed in cooler at 10 am. Pasta fell out of temp during busy lunch rush around 12:00 pm. Pasta was removed from coolers and placed in ice bath to bring temp below 45. 7F - At 1:30 pm inspector temped pan of marinara sauce on the line and found it to be 126 degrees. AS per manager the sauce had not been fully reheated to 165 degrees due to new employee responsible for reheating product. Sauce had been on the line less than 2 hours and was placed on the stove to reheat to 165
