Comments: This was just a re-inspection of the two cooler units that were previously out of temperature. The manager stated that they were both fixed this morning. The buffet top was measured at 42-43*F(pasta salad, pineapple). The sandwich cooler was still coming down in temperature and staff were waiting to put food products back into the unit until they saw that it was properly holding temperatures below 45*F. | ||

Joel stated there had not been leaks anywhere else in facility or by bathrooms. - Joel stated he had not received any illness complaints. - upon arrival there were about thirty pizzas prepped sitting on the wall racks by prep unit. however, employee was in process of stacking on rolling cart to put in walk-in. Joel stated they had just been made in preparation for dinner. he also stated pizzas do not sit out on racks for more than half hour. employees prep what need and put directly into walkin. - time cards that were previously on wall near pizza racks were still up but not in use. chart still up to dictate how to stack what types of pizza where on rack. - pizza wall racks were cleaner than last inspections. - Joel stated that the white spillage in the salad prep unit that was cited last inspection is not food splatter but a stain from using the wrong type of cleaner. -had Joel run dirty dished through dishwasher- required temp being met and dishes appeared clean when finished. discussed with Joel to have employees clean and do dishes during slow times. at time of inspection all three bay sinks had dirty dishes from the whole day soaking. |
