Observed container on counter next to stoves half-filled with ice and with american, blue and montery jack cheeses stored on top of ice with temperature of cheese measured to be 47 dF. Discussed with food worker, Dan, that container was prepared fifteen minutes earlier. Discussed keeping item stored in the cooler until ready to serve. Per food workers, cheese are used up within at least one hour once the concession stand opens for business, and will be stored on counter next to stove for convenience, but with lid. |
