Comments: 1D: 11- #10 cans of water chestnuts were found outdated (5 of them dated 9/4/10 and 6 of them dated 12/14/10) in dry storage. 2 of the cans were also severely dented. One #10 can of young corn was severely dented in dry storage also. All were marked with an "X" by owner and set aside for return. Corrected. 2C: One large bus pan of diced, raw, marinating chicken dound in walk-in cooler, stored above box of bean sprouts. Owner immediately moved box of sprouts to produce shelf. Corrected. 5A: Approx. 2 dozen raw shell eggs were found on the line, temped with inspector's calibrated thermopen and found to be 59oF. It was determined that they were out of temp for less than 2 hours. Inspector allowed eggs to be put on ice and returned to less than 45oF. Corrected. 6A: Approx. 3 lbs. of fried chicken wings were found in steam table along with 2 gallons of egg drop soup, temped with inspector's thermopen and found to be at 84oF and 122oF respectively. The chicken wings were piled too high and the lower ones were found to be in temp. These two foods were determined to be out of temp for less than 2 hours and inspector allowed them to be reheated to 165oF and re-hotheld at 140oF or greater. Corrected. 8A: Some food found stored on floor of dry storage and in rear of kitchen. 8D: Take-out containers and wrappers for egg rolls improperly stored on floor of dry storage. Take out containers were found on a couch. 10B: 4 door freezer in rear of kitchen leaking water on floor. 11A: 3-Bay sink improperly set-up. Should be WASH-RINSE-SANITIZE-AIR DRY.
