Recommended cleaning of upright freezer. All remaining hot/cold holding temperatures within appropriate ranges. Strong odor present in rear storage area. Per staff, a spoiled potato had been located upon opening in morning of inspection. Potato was discarded, and areas cleaned, but odor remains. Sanitizer ok. Glove usage and hair restraint ok.

Container of hard boiled eggs in upright cooler which operator states are for home usage for family. Operator indicated she uses a white cloth with sanitizer tablet solution to clean eggs. States that Ag & Markets states she only is required to check for obvious cracks and to clean eggs. Also states instructed by A & M that she does not have to grade eggs, as her birds are all of the same size. Discussed procurement from coop to cleaning steps. Instructed to not serve until further clarification of handling protocol is received from DOH. Remaining of food service inspection- cooler temperatures ok. Thermometers ok. Counter Sanitizer at 50ppm. Discussed mobile unit permit. Discussed generalized housekeeping.
