Comments: Coolers/Dishwasher rinse temperature >170F/Ok Met with Erin Abele and Mike Feldman about the current and proposed food service operations at the facility. Liberty wants to start making food available for sale to employees and the general public in the kitchen at 43 Liberty Drive rather than just sandwiches for the residents. The current kitchen is adequate for the increased food production. Walk-in cooler, walk-in freezer, commercial coolers, adequate work space, mechanical dishwasher all available. The current permit has the incorrect address on it, DOH need to update EHIPS (28-AG04, Operation ID# 338345). They want to start using the commercial kitchen in the adjacent building (same campus, but address is 47 Liberty Dr) to make sandwiches for individuals in the community. Currently the kitchen is only for employee food preparation and storage. From all appearances the kitchen is acceptable for use and has working commercial refrigeration, adequate workspace, mechanical dishwasher available. A separate permit may be required for the additional kitchen, but no fee would be required and workers compensation and disability insurance forms are already on file. There is also a separate production facility in the 43 Liberty Dr building where commercial French and Italian salad dressings are made. Process involves mixing commercially prepared powder/mix with water and other preservatives, placing in individual dressing packets, and then selling to NYS prisons. That operation is currently licensed through NYS Dept. of Agriculture and Markets and they have an approved process on file with them for the salad dressings. DOH will verify if this operation needs to be transferred from Ag&Mkts and a DOH permit will be required rather than a 20-C license based on proposed food service operations at the facility. Liberty also looking into maintaining their own vending machines and no longer contracting with Prestige Services. | ||
