Item 8F: Improper thawing procedures used Comments: Discussed hot holding waiver conditions with operators during the inspection. All waiver conditions were being observed. Some cold TCS foods were found being held on the service line at greater than 45 degrees F (turkey sandwiches measured 51 degrees). However, these sandwiches were made just prior to service and will be served immediately within two hours time. After discussion with operators, Sodexo's process for handling these foods is acceptable. A formal waiver for the holding of cold TCS foods on the service line will be issued, similar to the hot holding waiver already in place. Also discussed ill food worker policies with staff and provided "CDC Norovirus: Facts for Food Handlers" fact sheet at the conclusion of the inspection. |

Comments: Bologna sandwiches and salads containing sliced tomatoes found on the service line at at temperatures greater than 45 degrees F (approx. 55 degrees). Green beans found on the service line at 135 degrees F. Per operator, all TCS were at appropriate hot/cold holding temperatures prior to being placed on the line and the entire service window is less than two hours time. Not a Sanitary Code violation as long as any leftovers containing TCS foods are discarded at the end of the service each day. A formal waiver for this process will be issued. |
