Comments: Kitchen needs to be cleaned thoroughly before they begin to serve food again. Kitchen has not been used for some time so things haven't been kept up. Worker stated that it would be at least a month before food service started back up, so the kitchen would be cleaned before then. Probe thermometers are available to temp food with and the are coolers for some cold storage of food, and they are working properly. Three bay sink is in kitchen to wash dishes with (also needs to be cleaned.) Overall would be fine to start serving again once it has been cleaned.

Comments: Kitchen is currently not being used. Kitchen was not inspected last year because it was closed then as well, but the facility did serve food for a short time between inspections. The facility is still medium risk so the inspector requested to inspect the kitchen regardless of it not being used currently, in case they do decide to start serving food again. Owner was not present at time of inspection, and bartender did not have a key to get into the kitchen. Owner stated he would meet at the facility the following day to allow for the kitchen to be inspected. Bar area was adequate. Ice for drinking was separated from manifold, and ice that was keeping bottles cold. Three bay sink behind bar is used to clean the dishes. Discussed CIAA.
