Comments: The restaurant was in full swing, and numerous hot and cold food temperatures were measured using the DOH metal stem probe thermocouple thermometer, and all internal temperatures were found to be acceptable at 140 degrees F or above and 45 degrees F or below respectively. The quaternary sanitizer system is acceptable testing at 50-100 ppm. The low temperature mechanical dishwasher is running at 128 degrees F for the wash cycle and 132 degrees F for the rinse cycle with the sodium hypochlorite sanitizer cycle testing at 50 ppm, all acceptable. Glove use was observed for ready to eat foods, all bartenders were using tongs to place fruit in customer drinks. Food prep sink indirect drain is appropriate. All dry storage and areas are acceptable. Refrigeration units are clean with appropriate refrigeration thermometers visible. Walk-in cooler food is stored properly.
