Discussed cooling methods for potentially hazardous foods (soup): good. Discussed baked goods with cheese being under refrigeration. All cheese desserts are refrigerated in right display (when facing dining area) except 2 cheese danishes, stored in left display at ambient air temperature. Cannoli cheesecake in right display 41F. Operator stated that cheese danishes do not store well in refrigeration and that cheese is already cooked. Cheese danish ingredients include cream cheese, 1 egg, teaspoon of vanilla, 1/2 cup sugar. Discussed circumstances with supervisor over phone. Told operator that Monticello District Office would investigate to see if cheese danishes require Time as a Public Health Control (TPHC) agreement to be on display at ambient air temperature. Product thermometers and (chlorine) test strips for sanitizing solution easily accessible on-site. Facility observed to be kept very neat and well-maintained.
