Thermapen checked for accuracy. ok. Meatball sauce is stored in hermetically sealed bag on shelf. Temp'd at 59°F. Recommended metal bins for cold cut combo meats rolled in paper to more thoroughly disperse cold/maintaining temperature. Discussed illness reporting. Manager states no ill food handlers, have received no calls or complaints of illness post consumption,no employees own reptiles, etc. Operators state counters are cleaned/sanitized after each prep period, and service lines are done at lulls in between customer servicing. All chicken based products (meats,omelets-whole and egg white) are pre-cooked and frozen upon receipt and stepped down defrosted in walk-in cooler evening before usage. Recommend cleaning of ice machine.
