Comments: 1D--One #10 can of tomato sauce found in dry storage severely dented and creased. Voluntarily discarded by establishment. Corrected 5A--Roast beef measured 55 degrees using inspector's food testing thermometer while in cooler unit in kitchen. According to owner, the roast came in this morning from US Foods and a cook took it and sliced it and put in portion bags and into the cooler, all within that last 20 minutes. The product was voluntarily discarded by the establishment. Corrected. 8A--Product stored throughout kitchen on milk crates or bread racks which are neither 6" off of the floor or on easily movable carts to allow for easy access for cleaning. 8D--To go cups and lids are found behind bar stored uncovered, not in proper dispenser. 10A--Bacon found in bins lined with paper towels on cook surface in kitchen, paper towels are not food grade quality. 10B--Cups found behind bar being stored on paper towels which make this surface not smooth and easily cleanable.
