Comments: Reinspection conducted on this date to check previous cooling violation of taco meat. Spoke with manager and cook regarding cooling method of poentially hazardous food items. New ice wands were purchased and hot foods are put into walk in freezer, uncovered, and ice wands are alternated in food, stirring occasionally, until cooled. Food is then transferred to walk in cooler. New walk in cooler is in the process of being built which will allow for more room so foods can be cooled by transferring to large shallow containers of four inches deep or less, and leaving uncovered in the walk in cooler during the cooling process. Violation corrected, abate.
