Comments: Drinking water chlorine residual was 0.4 ppm. All critical control points (CCP' S) were observed to be achieved. Equipment; thermometer and sanitizer use; standard procedures; operator knowledge/ability to monitor CCP'S; and transport of meats and gravy going to the " Redford Picnic" were reviewed for a same day cook and serve menu. As per interview both septic tanks are pumped about every 3 years with little to no top crust and about a foot deep of solids on the bottom. Gave reminder to evaluate and maintain the tank baffles for protection and longevity of leach fields.
