Items are to be cooled from 120F to 70F within 2 hours then from 70F to 45F or below in an additional 4 hours. After items have been properly cooled they may be combined for easier storage. - Work surfaces will be maintained at regular intervals or when completion of a preparation items has finished. This is to prevent cross contamination issues. - All cold holding is to be 45F or below - All hot holding is to be 140 F or above. Due to the number and types of violations noted the Department will be conducting another inspection of the facility within 60 days. The concern is when the outside weather begins to become warmer the unit may not be able to hold all potentially hazardous food items below 45F. Recommend to have unit checked by a service professional. - When cooling items such as wanton dumplings in large trays. Once food items is 120F, the operator has two hours to cool food items to 70F, Then an additional 4 hours to cool from 70F to 45F or below. - Discussed that the vegetable sushi on display wrapped in rice must be held at 45F or below, due to the small size it is highly recommended to pack ice below service tray that has cover. Comments: The above operator has installed the new walk-in Freezer door as noted on previous inspections. The operator is now in compliance with this previously noted violation. |
