At 11:20, using calibrated food testing thermometer, I found approximately 7 - 10 lbs of coleslaw to be at a temp of 47 dF to 50dF. In speaking with the operator, it was found that pre-chilled ingredients were used, but the time of preparation caused a temp increase.
