Comments: No violations were observed. The inspector and the operator discussed various aspects of the NYS Sanitary Code including the acceptable manual dishwashing process of washing, rinsing, sanitizing and then air drying, proper hot holding temperatures and reheating procedures. Also, the operator and the inspector discussed prompt communication back to the central kitchen following delivered hot meals arriving onsite below proper hot holding temperatures. The onsite high temperature sanitizing dishwasher was observed working in accordance with the manufacturer specifications. | ||

Item 11C: Food contact surfaces not washed, rinsed and sanitized after each use and following any time of operations when contamination may have occurred Comments: Turkey and gravy arrived on-site and was 160 DF upon arrival and was served at 11:45 am. DOH temperature of turkey and gravy in pan was 145 DF. Squash and mashed potatoes was made on-site. Both were cooked to 160 DF and were at 140-145 DF when measured by the DOH inspector. Facilitys digital thermometer stopped working about 1 month ago. A stem probe dial type thermometer is being used but is very difficult to read. DOH inspector had trouble reading thermometer when calibrated against DOH thermocouple. It appeared to be calibrated correctly but was difficult to read. Operator stated she has difficulty reading the new thermometer. Recommend obtaining a digital thermometer. Dishwasher was working properly. |
