Comments: 5D- Chicken salad (1 gallon) located in cooler had a temperature of 61 degrees F. Interview indicated that chix salad was made for lunch and was only out of refridgeration for 15 minutes. It appears the indgredients were not pre-chilled prior to making the salad. Item was voluntarily discarded.

Comments: 5E - The 2 Refridgerators locted in the camp trip food area had temps of 50 degrees F. Inspector collected temperature of sour cream and cheese and both were at 42 deg. F. Operator removed all potentialy haz. foods from both units and placed in larger cooler in kitchen. Temperator of one cooler was adjusted. 2nd cooler may not be working properly and may need to be replaced. - Correct. 8E - Thermometers located in coolers in camp trip areas were inaccurate (reading 10 deg. difference from DOH calibrated probe). 5C - Cheese taken on out of camp trips is not stored on ice. Camp should not allow potentially hazarouds foods (i.e., cheese) to be taken out of camp for trips unless it will be properly cooled. Camp director has agreed that cheese will only be used during first day of trip then it will be disposed. 2c - Raw bacon observed stored above reaady -to - eat foods in cooler in camp food trip area. Item corrected when bacon was moved to a lower shelf. Bacon was in original unopened package. 11d - microwave was soiled.
