The operator also stated the facility will be sold in May 2014 and at that time the kitchen will be relocated upstairs. I informed mr. cook that he still must complete the items per the stipulation agreement immediately. The report that was sent to you in December 2013 stated the following: The three bay sink, ceiling and walls in the dry goods storage area and the wall by the deep fryer are all repeat violations that have NOT been corrected. Per a signed stipulation agreement, you were required to have these corrected by December 31, 2013. The follow up inspection in December 2013 required that you have this corrected by February 28, 2014 to avoid possible fines of up to $2000.00 per violation and a follow up inspection will be conducted to verify compliance. Plastic bags containing cooked chicken wings in the walk-in cooler and sandwich cooler were temped at 41 degrees F, sliced tomatoes in top of sandwich cooler at 42 degrees F. All raw beef and eggs stored on bottom shelf of sandwich cooler. An unused existing deep fryer, that was previously on site, was cleaned and put back in service to cook additional chicken wings. The unit was properly installed under the hood on the side of the flat top stove. |
