Comments: Food temperatures on premises were all within proper temperatures including ground beef for ziti (160 degrees F.). During course of inspection, there was a question about a metal rod in interior of ice machine that was near to ice and whether it was meant to be near the ice (concern was whether ice was meant to be touched by the metal rod. There was also a question about whether food preparation sink had a proper one inch air gap: no one was available during course of inspection to provide information regarding these issues. Had occasion to speak to Mr. Gary Comes, Superintendent at Town of Moriah Country Club. on 8/4/16 at 10:10AM. Mr. Comes indicated that the designated food preparation sink on premises has an air gap of two inches, and he has it at that level just in case there is an overflow. This violation was listed on inspection last year based on manager's assertion of one sink being the designated food prep sink (manager is no longer employed at facility). Mr. Comes also indicated that the ice machine interior metal rod is set up properly so that when ice level touches it the ice machine stops producing ice; he stated that the bar is made of stainless steel and is meant to touch the ice, so it is set up properly. All violations from prior inspection have been corrected except for violations 8B (ice scoop and handle touching ice at bar meant for customer service), 11C (Sanitizing test strips not available in kitchen for utensils/silverware cleaning), and 15B Section 2 (GE brand kitchen refrigerator light bulb not shielded)
